This recipe brings moringa back to its Indian roots. It’s comfort food that actually loves you back.
Ingredients:
- 1 cup yellow lentils (dal)
- 1 teaspoon moringa leaf powder
- 1 onion, chopped
- 1 tomato, chopped
- 1 teaspoon ginger-garlic paste
- 1 teaspoon cumin seeds
- 1 teaspoon turmeric powder
- Salt to taste
- Fresh coriander
- 3 cups water
Instructions:
- Cook lentils with turmeric and salt until soft
- In a separate pan, heat oil and add cumin seeds
- Add onions and cook until golden
- Add ginger-garlic paste, then tomatoes
- Stir in cooked lentils and water
- Just before serving, mix in moringa powder
- Garnish with fresh coriander
Pro tip:
Add moringa powder during the last few minutes of cooking to preserve its nutrients.
