Moringa Chocolate Brownies

Yes, you read that right. Brownies. With vegetables. That taste AMAZING.

 

Ingredients:

 

  • 1/2 cup cocoa powder
  • 1-2 tablespoons moringa powder
  • 1 cup flour (all-purpose or almond flour)
  • 3/4 cup sugar (or coconut sugar)
  • 1/2 cup melted coconut oil
  • 3 eggs
  • 1 teaspoon vanilla
  • 1/2 teaspoon baking powder
  • Pinch of salt
  • Dark chocolate chips (optional)

Instructions:

  1. Preheat oven to 350°F (175°C)
  2. Mix wet ingredients in one bowl
  3. Combine dry ingredients (including moringa) in another
  4. Fold wet into dry, don’t overmix
  5. Pour into greased pan
  6. Bake 20-25 minutes

 

Moringa leaf powder can be tossed into just about any baked good, but since it will turn the item green, chocolate brownies or muffins are good choices to start.
